About Tran Dynasty
Tran Dynasty is the Vietnamese restaurant of Fairmont Hanoi, led by chef Luke Nguyen, who reinterprets the country’s culinary heritage: mantis shrimp with Lý Sơn garlic and Bát Tràng clay-roasted pigeon are among the signatures. There is an open kitchen, private rooms hung with local art, and drinks pairings and tea rituals drawn from Vietnamese tradition. Lunch Monday to Friday, 11.30am to 2pm; dinner from 6pm to 10pm. Booking is required; smart casual.
